Challenge test for Listeria in matured beef

Last month we performed a great shelf life test for validating the shelf life of vacuum-packed beef. Using predictive modelling, we were able to ascertain the exact turning point at which the meat is sufficiently matured to eliminate the risk of the growth of Listeria in, for example, beef steak or roast beef. A good piece of old fashioned food shelf life craftsmanship.
