Substantiation of the Listeria growth potential combined with the optimisation of recipes

High-quality R&D pays for itself. Last month, we formulated a substantiation for the growth potential of Listeria monocytogenes for one of our clients. The recipes were made available to us, so we checked to see if any saving in costs for base material was an option. We found that modulating the recipes could achieve a saving of the cost price for base material. In addition, the substantiation of the Listeria monocytogenes growth potential could be clustered as a result of modulating the recipes because we were no longer required to formulate a substantiation for each individual recipe. As a result, we were able to realise a second saving because the substantiation of the L. monocytogenes growth potential became easier.
